The first is a 12 head Fimer sanitizing machine which feeds into the Cimec 16 head filling machine. The final piece of the process is a Kosme cold glue labeler. This system has a throughput of 70 bottles per minute, which is a huge step above our previous system capacity of 18 bottles per minute!
Our larger 30 / 60 barrel brewhouse is the workhorse of the facility. Tom and Bill have spent countless hours upgrading this system with the most up to date controls possible. Glycol temperature control systems are in place on each fermenter and bright beer tank to make sure that each step of the process has the most consistent processing temperature possible.
The brewery actually houses two brewhouses all in one facility. We have a small system 3.5 barrel and 10 barrel fermenters and bright beer tanks. These allow us to produce seasonal brews, smaller contract beers and test batches. This intermediate system gives us a great amount of flexibility to gradually step up production while still keeping the quality standards we demand.
The brewhouse and fermenting tanks reside in the fermentation room and the finishing/ bright tanks are located in the cellar room of the expanded brewery operation. Adjoining the cellar room is the bottling line which is comprised of 3 main elements.
